AND…I’m back! And back to cutting carbs. I keep straying mostly due to cost and having to think of another adult. But I really, REALLY need this to work. I feel so much better when I do it right. I’m not as strict as some, but it helps when I stay close.

This week I searched her site according to the meat I knew I had on hand. Then narrowed down according to what else I had on hand so that hopefully I won’t be needing to buy much other than the fresh ingredients. She also has a great archive of monthly low carb menu plans.

Tuesday: Mustard Pork Chops with Cabbage Wedges
Wednesday: Hamburger Broccoli Alfredo Casserole
Thursday: Green Enchilada Chicken
Friday: Hamburger Cabbage Stir Fry (also known as Crack Slaw)
Saturday: Tuna Quiche with Dill
Sunday: Leaving this one TBD because I’m thinking we’ll have some kind of family dinner between Thursday and Sunday because my nephew is in town.
