Menu Planning Wednesday

I stayed pretty on track with the menu last week with exceptions of Monday and Tuesday. Andrew and I ended up going to town with my mom on Monday. We ended up having a late lunch in town and just something light for a late dinner. I had a sandwich. Andrew had leftovers from lunch.

Tuesday, to be honest, I can’t even remember what we had. LOL

I do remember I stuck with the Mexican theme, but it wasn’t enchiladas. I think I did chicken…

Oh yes! That was it! I had some chicken I bought in bulk that I hadn’t divided and packaged up for the freezer yet. So I cooked up some of that in the slow cooker with some spices. I then made some enchilada sauce out of tomato juice. I poured a cup of that on the chicken towards the end, and then used some of it for the rice I made to go with it.

Menu Plan Monday on Wednesday…

Wednesday: Have a field trip this day. The local grocery has the rotisserie chickens on sale today for only $3.99. So I’m going to pick up one of those and warm it up with a can of green beans. I’ll also make a side of Knorr Creamy Chicken Noodles.

Thursday: I’m trying to empty the chest freezer so that I can defrost it. So tonight we’re having Hamburgers and Hot Dogs to use up the buns I don’t have room for in the refrigerator/freezer.

Friday: Pizza, Pizza, Pizza – Wonder if they’ll ever tire of Pizza every Friday?

Saturday: Sandwiches of some sort. I don’t know yet. Going to wing it. Maybe I’ll do Monte Cristos. Those are always a hit.

Sunday: BBQ Ribs and mashed potatoes with green beans

Monday: Rice and Hamburger Gravy with green beans

Tuesday: Easy Enchiladas {maybe for real this time}
